Healthy broccoli soup with coconut milk

Every Tuesday I make dinner for my mom and I, today I decided to try something different: a broccoli cream soup with coconut milk.
The soup turned out really well and it was very tasteful. Cream soups are just so good, super healthy and perfect for the cold winter/spring weather.




Ingredients(for 2 servings):
1 whole broccoli
A little less than a 1/2 can (200ml) of coconut milk
1/8 tsp. chili powder
1/2 yellow onion
2 cups of water
1 tbsp. Olive oil
Sunflower seeds
Salt, pepper, basil, oregano etc.

+tip you can also add 2-3 cloves garlic if you like (unfortunately we didn't had garlic at home, and I was way too lazy to go out and buy some)





How to make the soup:
Heat your oil in a large saucepan on medium heat. Then chop your onion and put it in a large saucepan. Add your broccoli (which you also need to chop first), cover it with water and let the broccoli cook till it is soft. Discard about 3/4 of the water. Then add the coconut milk, chili powder, salt, pepper, basil or other spices. Then use a hand blender to mix the soup until it's smooth. At the end sprinkle with some sunflower seeds.  




Now you have your delicious and super healthy broccoli soup. The best part about this soup is definitely that it's easy and quick to make.
